Limoux - Languedoc

Under this mysterious name, a young man called Etienne Fort is rejuvenating the Limoux appellation. 


Located nearby the Saint Salvadou castle, Monsieur S is bringing the sparkling standards to its next level, with careful blends of Chardonnay, Chenin and Mauzac with a touch of Pinot for the finest experience. 


With very low dosage and an impressive work in the vineyard, Etienne Fort is successfully giving his own twist to the Mauzac grape variety, mandatory used to be labeled under the Limoux appellation.

Monsieur S in the bottle

Samo Mauzac Blanc

100% Mauzac based, from vines planted on clay soil at 380 meters of altitude. Fermented and aged in stainless steel vats without any fining and filtering, this a fresh yet complex white that carries all the potential of its terroir.


Crémant de Limoux Blanc

Coming from a limestone and clay soil located at 450 meters of altitude in the Pyrénées Mountains, the juices are fermented with indigenous yeasts, without fining and filtration. It is aged 6 months in demi-muids (bigger oak barrels) and 12 months on lees, and then bottled with Zero dosage.


Syrah Juste Le Rouge

An original expression of Syrah, coming from 25 years old vines located at 350 meters of altitude, with a South exposure cooled by the Pyrénéen climate coming from the mountains. The process follows carbonic maceration, and then 6 months aging in stainless steel vats.
