Poinchy - Chablis
The Maison is run in Poinchy by the couple of Isabelle and Denis since 1990 when they took over the 2 hectares of Pommier family land, the production was then sold in bulk to negociants. In 1994/1995, the winery is built and the production is now sold under the label of Maison Pommier, to reveal all the potential of the vines and wines on its own, planted in both Chablis and Petit Chablis appellations (23 hectares in total today).
Always in the search of perfection and new projects, the couple has been producing red wines (Irancy and Bourgogne Rouge) since 2007, and in 2012 they expanded the vineyards with two parcels of Chablis Premier Cru, Fourchaume and Beauroy.
The Pommier couple doesn’t use any chemicals in the vineyards following the biological certification, and uses as much as natural yeast as possible. It is one of their main commitments, not always easy in the Chablis area due to tough weather conditions, and rare enough to be mentioned.
The terroir of Chablis is so unique with a type of soil only found in this area, the Kimmeridgian, composed of layers of limestone, soft clay and fossilized marine organisms that dates back to the Jurassic period.

Petit Chablis Hauterivien
Coming from 25 years old Chardonnay, fermented in stainless steel vats to preserve all the primary fruits purity. Aged 6 months on lees.

Chablis
An attractive Chablis village, coming from 25 years old Chardonnay plants. Matured for 6 months on lees and aged for 12 months in stainless steels vats to retain all the freshness and fruit purity we like about Chablis.
Chablis Les Reinettes
From a parcellar selection carefully conducted by the Pommiers, with no use of oak, only stainless steel vats, to retain all the fruit purity and the tension typical of Chablis.
Chablis Premier Cru Côte de Lechet
This 1 hectare parcel has an ideal South exposure, and the Pommiers know how to pick just in the right time. 70% are aged in stainless steel vat, and 30% in old oak barrels, for 18 months.
Chablis Premier Cru Fourchaume
Maybe the most well-known Premier Cru in Chablis, the Fourchaume parcel of the Pommiers is only 1 hectare. 70% are aged in stainless steel vat, and 30% in old oak barrels, for 18 months.
Irancy
Irancy is a forgotten small red wine appellation of the Chablis region that we are proud to bring to Hong Kong. Made of Pinot Noir, in a Burgundian style - with a tint of César, a traditional grape of the area.
