As stated by its name, Domaine de la Nouvelle Don(n)e is aspiring to a new vision of the South West wines, with a modern philosophy of winemaking in this area.
This ambitious promise was made by Wilfried Valat when he set up his own 5 hectares estate, la Nouvelle Don(n)e, in 2007 in the mountains of the Pyrénées Orientales.
With a diversify terroir (various types of schists and calce), steep slopes, North facing exposure, high winds (Tramontagne) all year round and very warm summers… this is indeed a real challenge, that explains the very low yields.
A true craftsman of the grapes, with an almost Burgundian way of working giving an elegant and unique expression of this somehow under-looked region.
Indeed, Wilfried was trained with some of the finest Pinot Noir growers of Burgundy, Domaine Méo-Camuzet in Vosne-Romanée and Domaine Joblot in Givry. A new playground for Burgundy in Languedoc!

Neo Nervis Blanc
100% Macabeu, biologically farmed and aged for 12 months in old oak barrels. Something definitely new, and promising.
Mustango Blanc
One of the favorites of the team, made of Grenache Blanc and Gris with great density of fruit. Surprisingly sharp and tense, it will catch the attention at any blind tastings.
Kashmir Rouge
100% Carignan planted in the 1960s, early picked, fermented in whole bunches and aged for 12 months in old oak barrels and stainless steel vats. A delicate and refined Carignan, as rarely made.
Vertigo Rouge
100% Carignan, aged in demi-muids, with an all natural approach. Thanks to a long maceration of up to 40 days, the texture is exquisite and the genius result of the work of Wilfred.
